with Roasted Applesauce
We had this old acorn squash laying around so we decided to make it into a meal or sorts...or possibly a dessert! Here's the recipe:
1 acorn squash
4 apples (peeled and chopped)
3/4 cup apple cider
1 tablespoon lemon juice
2 tablespoons brown sugar
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
Directions:
- Slice acorn squash in half and gut out seeds
- lightly brush with butter and cover with a little brown sugar and cinnamon
- Bake (wrapped in aluminum foil) at 400 degrees for 1 hour
- Mix apples, apple cider, lemon juice, brown sugar, cinnamon and nutmeg in bowl and bake at 400 for 1 hour.
Pretty darn good. Makes the squash very sweet while the apples give it a zing!
